Time Flies

Addie turned one year old today. I know parents always say this but honestly, I can't believe it's already been a year! I feel like I just had her and it's such a bittersweet day for me. I can't help but think back to the day I had her. When she decided to come, she made it fast and I almost had her in the car. I'm happy she's growing up so big but I miss my baby girl. Well, she still is my baby girl but she definitely won't be for long. Addie truly has been such a blessing. She has been a great baby and is so sweet, I honestly couldn't ask for more. Heavenly Father knew I needed a good baby and boy did I get one! Addie is walking all over the place without help and is learning new things every day. She gives me kisses and points to my nose when I ask her where it is. Words cannot express how much I love this girl! My computer is being dumb and won't load my pictures so for now, I'm only doing one and will post more later. A lot of the pictures will be the same as Facebook so I apologize. We love you Addie cakes and can't imagine life without you!!

Call Me Betty



I know this may come as a bit of a shocker, but I've been cooking. For like 2 weeks straight. Impressive, right?! You should be because if you know me, I don't like to cook. I CAN cook, I just don't like to. I've been trying a bunch of different recipes and was especially excited to try "freezer meals" that I got from Pinterest. So, below are some of my adventures in cooking.
Sweet potato black bean enchiladas (bueno!)
Grilled pesto pizza (we used the oven so don't know if you can call it grilled)
Homemade salt & cracked pepper potato chips
First attempt at the potato chips didn't go so well
Broccoli cheddar chicken braid
This recipe was called Healthy BBQ Chicken but it has ZERO BBQ and tasted like sweet & sour chicken (freezer meal that was sadly quite bland)
Turkey Lettuce Wrap with Tomato-Avocado salsa
Out of all the meals I've made we've only like a couple of them. The lettuce wraps, the pizza, and the enchiladas were the better ones. I was dissapointed to find the "freezer meals" were VERY bland. I love the idea of making the meals at once and then freezing them for later. I especially love that I get two meals (probably more since there is only two of us) out of them. I've decided to keep making the "freezer meals" but put my own twist on the recipe. Brock is LOVING the fact that we have dinner pretty much every night. Every time he says the blessing on the food there is always the phrase "bless Jesica's hands that they will not be weary". He's afraid I'm going to get sick of cooking and all happiness will end. Otherwise, life is good! Addie is walking really well and is into EVERYTHING. I can't believe how fast she's grown! She is still my happy sweet baby girl and she makes us laugh all the time!

Happy 31st Birthday

Today would have been my brother Garrett's 31st birthday. It's been really hard not being close to my family today. Just being able to be close to them would make this day a little easier but thankfully I have my sweet baby girl and Brock. It's funny how now matter how much time passes on, his birthday rolls around and it's just as hard as the first year he wasn't with us. This is why I am so grateful for the gospel. How people deal with losing a loved one without the gospel is beyond me. So... Happy Birthday Garrett! We love you and think of you every day!

Might As Well

So I'm at work bored out of my mind waiting for the last patient to come out of surgery which won't be for another hour and I figure, why not update the ol' blog? I don't have pictures but I'm already slacking on my goal to document our lives better. I'll start at Christmas... We went home to AZ and loved every minute of it. It was so fun to see family and friends and even harder to come back to Utah. Brock turned 28 on Jan 6... such an old man! Not really but I can't believe how time is flying. I'm having a hard time remembering what we did for his birthday. I know we tried to see Mission Impossible 3 (he succeeded, I had to leave with the baby half way) then went to eat at Tucano's. We didn't really do anything else because it's hard to do things with a baby (hence me missing MI3). Brock is still not loving his job. I know this is hard for people to understand but the job isn't what Brock thought it would be. The interview was very misleading and it's frustrating to go to school for 5 years or so and work in a job where you are the only one with a degree and everyone hates their job. Brock is a glorified mechanic, not an engineer and he's frustrated. He feels like he's wasting his time up here even though this job is good and gives us benefits. He's not happy which makes me unhappy. Soooo... our plan is to get our savings built up and then jet when we reach our goal. We left our rad house in AZ to live in a two bedroom apartment... what were we thinking?! Plus, we've moved 3 or 4 times in the last 6 months. Punch me in the face. First we move from AZ to Lehi. Then from Lehi we move into the one bedroom apartment. From the one bedroom we finally moved into a two bedroom. I'm so done with moving! It's amazing my child is still alive... she was so neglected every time we moved. I will say this move has been a good experience and I think we needed it to see that we don't like being away from family. Plus, if we hadn't taken the job, we would have always wondered "what if"? So now we know and we move on! My job is great. SO much easier than my last job. I'm actually bored. But, the job is flexible (which I love) and brings in extra income to bring us closer to our savings goal. The best part about working in surgery is no weekends or holidays. How cool is that? Addie is getting so big. She's starting to take a few steps by herself and it's pretty exciting to think she'll be walking really soon. I'm sure I'll regret that once she actually starts walking but it honestly doesn't matter becasue she's already into everything. That's about it! We just work and try not to miss AZ too bad. It gets really lonely up here and it's getting harder to be away but we try to stay positive and focus on getting back as soon as we can! Pictures to hopefully come later (but probably not so don't get your hopes up... like anybody reads this anyway)!

Love This Guy

If you recognize what movie this is from you are one of the coolest people I know. I watched Conan last night mostly because I love Andy Richter BUT more so because Martin Short was on. I LOVE him. Maybe it was me or something I ate but I laughed the entire time. If you don't know what movie this picture is from, you need to stop what you're doing and go watch Pure Luck. Best. Movie. Ever. Ok, maybe not ever, but pretty close.
